Teff Breakfast Muffins, or, Testing My New Shellac Manicure

Last night I decided that the protein bars I've been buying at the store are:

a) not worth the money
b) not a sufficient breakfast before my early morning workout
and
c) incredibly boring and tasteless if I actually get the ones with no chemicals and good ingredients.

And I've been wanting to use more teff http://teffco.com/, so I decided to make muffins about it.

I adapted the following recipe:

Except for I am ridiculously hypoglycemic and NEVER have orange juice in the house, let alone applesauce, so I substituted organic apple butter for both of those, and dark organic molasses for the agave. I diced the carrots instead of grating, so the carrots and apples were the same sizes, and used coconut oil for the fat.

The coolest thing about this is that I'd just gotten my nails done, and tried the new "shellac" manicure craze that is sweeping nail salons nationwide.

Side note: I'm not very trendy. I usually start to like new fashion trends once I've been inundated with them for so long they are starting to be out of style, and then rarely.

But I get into my nails. I had Lee Press-Ons in the 80s, acrylics with airbrushed designs back in the 90s, and sparkly gel tips on my fakeys back in 2007.

However, my love-hate relationship with acrylics, and long fingernails in general, finally turned to pure unadulterated hate after trying to train for my 2 bodybuilding shows with them. YOU try deadlifting your bodyweight with acrylics. For three sets of 12. No thanks.

In any case, manicures never last long enough to make the $12 seem worth it, so I haven't had one in a number of years. But this Shellac thing is intriguing, and since I'm not (rock) climbing at the moment, I thought I'd check it out. They basically put the requisite base coat, 2 coats of whatever color you pick, and top coat, just like a normal manicure, but they UV-bake your fingers in between each layer.

So far my nails look EXACTLY the same as when I left the salon, even after washing 2 loads of dishes, chopping and mixing, not to mention eating a bowl of popcorn. I'll let you know how it goes.

Oh - and the muffins are delicious! Filling, molasses-y and delicious.
